A Taste of Pittsburgh at Home

Pittsburgh is home to a thriving culinary scene with a variety of restaurants boasting tastes from all cultures, but sometimes it is best to get back to the roots right in the comforts of your new home at Glasshouse.  The Steel City is known to many things, but it is famous for its melting pot of population bringing food from all different cultures. We’ve rounded up a few Pittsburgh favorite recipes for your next night in.

Polish Haluski

  • 1 onion (very large and sliced into rounds)
  • 8 ounces butter (divided)
  • 1 large head cabbage (cut into 1-inch pieces)
  • Salt (to taste)
  • Freshly ground black pepper (to taste)
  • 2 tablespoons water (if necessary)
  • 8 ounces egg noodles (1/2-inch wide, cooked)

  • 2 cups (241g) King Arthur Unbleached All-Purpose Flour
  • 1/2 teaspoon salt
  • 1 large egg
  • 1/2 cup (113g) sour cream
  • 1/4 cup (4 tablespoons, 57g) butter, room temperature


  • 1 cup (227g) warm mashed potatoes
  • 1 cup (113g) sharp cheddar cheese, shredded

To finish:

  • 1/4 cup (4 tablespoons, 57g) butter
  • 2 large (156g) shallots, diced; or one medium (156g) onion, sliced

For the Filling:

  • 3 ounces egg whites (from about 3 large eggs; 85g)
  • 3 3/4 ounces sugar (about 1/2 cup; 105g)
  • 1/4 teaspoon (1g) Diamond Crystal kosher salt; for table salt, use about half as much by volume or the same weight
  • 1/4 teaspoon cream of tartar, or 1/4 ounce lemon juice (about 1 1/2 teaspoons; 7g)
  • 8 ounces heavy cream (about 1 cup; 225g)
  • 2 1/2 ounces milk (about 1/4 cup plus 1 tablespoon; 70g), any percentage will do
  • 1/8 teaspoon vanilla extract

For the Chocolate Coating:

  • 7 ounces dark milk chocolate, such as Endangered Species 48%, finely chopped (about 1 cup; about 200g)
  • 3 1/2 ounces refined coconut oil (shy 1/2 cup; about 99g)
